Put away the peanut butter and jelly and hide the cereal!
Yeah, dinner time can be? difficult. Most of the time, we?re trying to eat quickly before running off to meet a friend for drinks or heading to the gym to get our workout on. I, for one, can shamelessly admit that a good, old-fashioned PB & J often trumps anything else on the dinner menu during week nights. However, the other night I dared to try something different: a tasty pasta dish that actually required more than just pasta and marinara sauce! And voil?, you would have thought I jetted off to Italy and back to get this recipe. Just kidding, but it is pretty darn delicious. Read on and be the judge yourself!
Preparation time: 15 minutes
Total time to make: 20 minutes
Ingredients:
2 cups whole grain (or spinach) pasta
2 tbs white wine olive oil
1 tbs vinegar (optional)
1 Pecorino Romano cheese
1 tomato
Directions:
1. Cook pasta in boiling water on stove top accordingly for 10-12 minutes.
2. When pasta is finished boiling, strain it and put into separate bowl.
3. Slice (or grate) cheese into small squares and place into bowl.
4. Slice tomato and place into bowl.
5. Add vinegar and oil.
6. Toss pasta and enjoy!
