I don't know about you, but just looking at this picture of paella makes me hungry. I'm a big fan of paella, but never in a million years did I think that I could cook up this Spanish staple dish. I'm not too bad of a cook, but something as complex as paella? No way.

And so I was elated when?Mary Luz Mejia?from?Sizzling Communications?invited me to attend one of? Pimenton's?paella classes. I know absolutely nothing about Spanish?cooking, but never fear, chef Jose Arato is here! And thank goodness for that. Owner and head chef of Pimenton?(@PimentonTO), Jose Arato takes his Venezuelan background and many years as a chef at the Hyatt Park Hotel to everything that he does. Pimenton offers lots of cooking classes, catering, charcuterie, wholesale, cooking supplies, and food to go.

To ensure that we weren't salivating all over the paella ingredients, Chef Arato made sure we were well-fed right from the start with a couple plates of tapas. Good thing, because coming here from work I was starving and probably wouldn't have lasted an entire class! Too bad they weren't part of the lesson because they were delicious! I would later find out later that Pimenton offers a Spanish Tapas class, so will definitely be looking into that. Chef Arato has intentions to add more classes such as a wine pairing class for Spanish dishes, which would be taught by himself and a professional sommelier.

Ice cream in simple steps!

After some vanilla bean scraping, egg beating, and boiling, voila! A concoction for a delicious Turr?n Ice Cream, which is served withwith Ibiza sea salt and olive oil. I don't know about you, but when I first heard that combination, I was a little taken back. The combination doesn't sound very appetizing, but believe me, it was a holy matrimony. More on this later.

After that, it was on to the main event. I was a little nervous at first not knowing the first thing about ?making paella, but Chef Arato is so knowledgeable and welcoming of any and all questions, each step of the way. I definitely learned a lot!

The class is really hands, even for the prep work. We basically readied all the vegetables to be cooked and even learned how to prepare squid, mussels, and clams!

Chef's Tips(only a few of the many that night!):

  • Soak the mussels in flour water first when they are still alive. The mussels will eat the flour and this will prevent getting a lot of sand in your paella
  • If a clam is open before cooking, it's not fresh anymore. Dispose.
  • Add a dash of salt when chopping garlic and other herbs which will serve as an abrasive and allow for a finer mince.

After all the prep work, off to the stove!

Adding lots of stock. It's important not to let it dry up!

Chef's Tips:
  • Even heat is key to paella, so only flat-bottom pans should be used.
  • Cook shrimps with the shells on. They hold a lot of the flavour.
  • Taste your soup before after adding salt. The soup should be saltier to taste because you will need to replenish the stock base as it cooks. Extra salt will ensure there is enough flavour for the rice to be added.

After all your ingredients are cooked, the rice is the very last thing to be added.

Chef Arato spent a good amount of time talking about paella rice. From the passion in his voice and the way he carried that sack of rice like a baby, you can tell how much he loved his rice! Turns out?paella should always made with Bomba rice. Just as there are different knives for different tasks, there are different grains for different dishes. Unlike most other rice that are long and lengthen when cooked, Bomba rice expands 3 times fatter and has a lower startch content. As a result it is extremely hard to over cook, and just what you need for paella. And if you're googling where to get Bomba rice for your next vat of paella then i'll save you the trouble. Pimeton is one of the very few places in Toronto you can get the rice without ordering it online.

And now the best part: the eating! After being tortured by all the wonderful smells, at the end of the class everyone gets to partake in decorating the paella and consuming their cooking successes. Chef Arato prepared an Escalivada (grilled eggplant and pepper salad) and some sangria, instantly making it a full course dinner!

And of course no meal is without the desserts.

Turr?n Ice Cream -Ice cream with Olive Oil and Izbiza Salt, Santiago Cake -Gluten Free Almond Cake

Like I said, the combination in the ice cream sounds a little off, but it was anything but that. You really taste the flavours of the olive oils, and the sea salt pairs perfectly with the sweet silky ice cream. Aside from ice cream we also had a gluten free almond cake which was absolutely heavenly. Can there be a class for this too please?

Jennifer Evans Gardner: Where's My F-ing Casserole?

I live in a wonderful community. When someone gets cancer, has a death in the family, or gets ankle surgery, friends and neighbors are there for each other. Upon learning of a tough situation, someone sends an email out, and within minutes, a long list of folks have signed up to deliver meals to that family for weeks, sometimes months. It's amazing. Over the years, I've cooked and delivered my share of casseroles in hopes of lightening someone else's burden. That's what we do. We're human beings, after all.

However, when someone gets divorced, it's a different story.

Last year, my husband of 14 years and I separated, which was in itself miserable, but even more so because we have a child together, one who was just turning from tween to teen. It's already an awkward age, but watching your parents split up and having to move out of your home during this period makes ankle surgery look like a cake walk.

Divorce is horrible. No matter who left whom, or how unhappy a couple seemed to be before they split, it's horrible. In fact, it's more horrible than anything I had imagined. So horrible that I soon began to call and apologize to friends who had been through it. Who knew that it could be so agonizing, heartbreaking, and just mind-numbingly painful, both emotionally and physically?

I knew now. I lost sleep and lost weight, and could barely get my son to school. I had trouble focusing, as my mind would forever drift back to painful thoughts. If I hadn't had work to do, I wouldn't have bothered getting out of bed. As a freelance writer, I began to get multiple assignments for the wedding section of a newspaper, interviewing young brides in love. The universe has a great sense of humor.

I couldn't eat, so obviously, I couldn't cook either, but somehow between crying jags in my bedroom, unpacking a house, and setting up new electric and cable accounts, I was able to get dinner to my son. Thank God for Daily Grill and Chipotle takeout -- and I love you, Trader Joe's frozen section. One morning, after weeks of this, I dragged my exhausted body into the kitchen to make breakfast, checking my email while waiting for the waffle to pop up from the toaster. First up: a mass email asking for casseroles for the family of a relative who had passed away.

Go ahead, crucify me, but the thought bubble that popped up wasn't pretty. My son hadn't had a home-cooked meal in ions, and I was certainly in no shape to be near sharp knives and a hot oven. "Where's my f-ing casserole?" the voice in my head said. After all, I was mourning a death, too: the death of my marriage; the death of my life as I knew it, the death of our family; the death of the happily-ever-after dream.

To add insult to injury (yes, the injury of not getting a f-ing casserole), some of our friends scattered in the wake of our separation. You could almost hear the whooshing sound as they all took one giant step back. Is it possible that divorce is an even more awkward subject than death? Or do some just think it's contagious? One can't help but suspect there is judgment... after all, cancer and death are an act of God, but divorce is, well... a choice, right? Yet those who've never been through it are surely aware that one never gets married to get divorced... that (unless you are a celebrity) it's almost always a last resort.

Of course, not everyone bolted. I do have amazing friends who stepped up to the plate, who wiped away my tears, who peeled me off the floor, who sat with me at that first "single-mom-alone-at-a-bar mitzvah" episode, and who - when the bar mitzvah photographer asked (camera in hand), "who do you belong to?" answered, "Me! She belongs to me!" To be fair, that friend knew what I was going through. She'd been through a divorce herself.

So here's a thought. The next time someone you know is going through a divorce, no matter how awkward it might feel, pick up the phone and maybe just check on them. Check on their family. Check on their former spouse. And for the love of God, bring them a f-ing casserole.

Despite its pink-hued exterior, the interior of Mary Kay's home has an elegance that belies the outside.

The home is built on a grand scale, with 40-foot-high ceilings and a foyer that includes busts of famous composers inserted in the ceiling. Highly detailed paneling and moldings appear throughout the house, as well as enormous floor-to-ceiling, beveled glass windows that look out to the terraced gardens.

Situated on an acre of land in the high-end Dallas neighborhood of Old Preston Hollow, the grounds of Mary Kay's home were designed to mimic the San Simeon estate, William Hearst's famous home in California.

I attended the "Beyond sports vs games" workshop at the IT University of Copenhagen this week. The workshop was an attempt to get (sociology of) sports and computer games researchers to meet and discuss, but the sports researchers didn't show up.Knowing what I know about the organizer, T.L. Taylor (her new book is called "Raising the stakes: E-sports and the professionalization of computer gaming"), I thought the topic of the workshop would be competitive computer gaming and the "sportification" of computer games. My contribution was a "curveball" as it wasn't about competitive computer gaming, but about competitive programming (i.e. programming competitions) in relation to "electronic sports".

It turned out that my contribution was even more peripheral, as most of the participants were interested in sports computer games, i.e. for example (annually released - great for business!) football, american football and basketball computer games. The emphasis wasn't on "how computer games are turned into sports", but on "how sports are turned into videogames". Which is really really really big, but also situated straight in my dead angle. One of the papers we read in preparation for the workshop stated that:

"The sports gaming industry is the crown jewel of the video games world. It is a one billion dollar per year industry; sports games account for more than thirty percent of all video games sales."

I had no idea. To a large extent, we are talking about computer games for sports fans. I'm not a sports fan. Truth be told, I hardly play computer games anymore due to lack of time (except of course together with my children as a family activity).

There were a couple of presentations (Olli Sotamaa and Abe Stein) about sports fandom and fantasy sport games, i.e. putting together you football "dream team" (with players from many different real-world teams) and competing against other teams based on how well "your" players are doing in their real-life games. Another interesting talk (by Chris Paul) was about how sports game revenue is changing from the game (a physical disc) to charging (also) for online access. So, what would happen to the gaming industry if/when the economic cake doesn't grow anymore? How would a prolonged period of no/negative economic growth affect gaming and the gaming industry?

They have very different views of authorship and ownership of "digital playing fields", so what happens when a "property" (a computer game) becomes an important cultural phenomenon (as Blizzard's "Starcraft" game is in Korea)?

Emma talked about what is and what isn't considered to be "real sporting skills" in e-sports, with plenty of references to non-gamer/athletic ideals and cultures. E-sports is a gendered space, rife with masculinity and sexism and where pro-gamers (and their fans) predominantly are young, white, straight, middle-class men. Emma's talked about a study of hers on how players from "the margins" (women, minorities, but primarily players of a marginalized game) navigate and rebel against these structures and practices.

ScienceDaily (Feb. 16, 2012) ? A team of scientists from The Scripps Research Institute, collaborating with members of the drug discovery company Receptos, has created the first high-resolution virtual image of cellular structures called S1P1 receptors, which are critical in controlling the onset and progression of multiple sclerosis and other diseases. This new molecular map is already pointing researchers toward promising new paths for drug discovery and aiding them in better understanding how certain existing drugs work.

The molecular structure, described in the February 17, 2012 issue of the journal Science, is unique as the first-ever-to-be-determined lipid G protein-coupled receptor (GPCR). Molecules of this type play important roles in everything from cancer to metabolism, and this recent success should pave the way for researchers to establish the structures of other family members.

"There's something special about the S1P1 receptor," said Hugh Rosen, MD, PhD, a Scripps Research chemical biologist who co-led the work with Raymond Stevens, PhD, a structural biologist also from The Scripps Research Institute. Anderson, MD, PhD, director of the Division of Program Coordination, Planning, and Strategic Initiatives that guides the NIH Common Fund. "Combining structure-based analysis with small molecule screening serves as a model for effective drug design."

The new work reveals the structure of the S1P1 receptor, a protein embedded in the membranes of various cell types. When natural ligands such as the signaling lipid sphingosine 1-phosphate or potential drugs make specific interactions deep in receptor, portions of the receptor change shape to trigger cascades of chemical reactions inside the cell important to the maintenance of health.

Based on a screening lead from the National Institutes of Health Molecular Libraries Small Molecule Repository, Rosen and Scripps Research Chemistry Professor Ed Roberts discovered and optimized other modulators of S1P1 receptors. This led to RPC-1063, a compound in clinical trials for multiple sclerosis by Receptos, a company co-founded by Rosen and Stevens.

Rosen's lab has also shown that modulating S1P1 receptors can protect mice from a pandemic flu virus. This shows that the receptors may also be good drug development targets for other conditions tied to immune responses.

A Shifting Binding Pocket

The new study used the technique of x-ray crystallography to reveal the high-resolution three-dimensional image of the S1P1 receptor. The results provide scientists with important new details about the receptor's mechanism of action.

One aspect of the receptor structure that is of particular interest is the binding pocket for the natural ligand or potential drugs that activate the receptor responses. The structure revealed how the binding pocket shifts to activate signaling. Understanding how that occurs makes it easier to identify additional compounds that might have effects in controlling the receptors.

With this structural information in hand, the scientists can now advance efforts to understand the specific chemical transformations that drive the cellular responses tied to multiple sclerosis and other diseases. "Better understanding always allows you to think about applications in a variety of ways that you might not have thought about before," said Rosen. "This is an area that will keep us busy for many years to come."

The S1P1 receptor structure has already yielded benefits, according to Michael Hanson, a scientist and director at Receptos, and lead author of the new paper. "The structure has helped us understand the details regarding receptor-ligand interactions for this receptor and structural data can be used more routinely for drug discovery projects of other GPCRs," he said.

In addition to Rosen, Stevens, and Hanson, authors on the paper, entitled "Crystal Structure of a Lipid G protein-Coupled Receptor," were Euijung Jo, Stuart Cahalan, Stephan Schuerer, Germana Sanna, Gye Won Han, and Peter Kuhn, from Scripps Research, and Christopher Roth, Mark Griffith, Fiona Scott, Greg Reinhart, Hans Desale, and Bryan Clemons, from Receptos.
